– 4 lamb shanks

– 3 tablespoons of sunflower oil

– 1 onion

– 1 leek

– 1 carrot

– 5 parsley sprigs

– 1 bay leaf

– 4 cloves of garlic

– 1 celery stalk

– 5 sprigs of fresh thyme
